From EstherC’s “Recipe Rifle” blog. Full recipe here:
“I wanted to try out a long slow roast so I picked up £3-worth from the butcher and slung it in the oven, just rubbed with some salt, for 20min on 220C (428F)and then 2 hours at 170C (338F).” Use your own dipping sauce or find EstherC’s on the full recipe link.
Aromatic pork belly hotpot
A fine example of the great versatility of pork belly and the slow-cooking technique, this time using aromatic oriental flavourings. This is authentic Chinese home cooking of a kind rarely found in restaurants. Link to the recipe on the BBC food site is here.
This is one of many great recipes in Hugh Fearnly-Whittingstall’s big beautiful book: The River Cottage Meat Book
